Sauvignon Blanc 2011 for the summer
The recent launch of De Grendel Sauvignon Blanc 2011 is the perfect kick start to white wine season. Perfectly in sync with sunny days, just in time for the sunny days to enjoy the passion fruit, peachy and ripe fig flavours on the nose with a full well balanced mouth feel that ends with a crisp dry acidity.
In the cellar: All the fruit was handpicked during early morning and received skin contact, according to ripeness and chemical composition, followed by three days of settling, racking and inoculation with selected yeast cultures. Fermentation lasted between 14 and 22 days at ±13 °C, followed by 100 days of full lees contact ensuring a rich and rounded mouth feel. Only 600L per ton was recovered.
Delicious with: summer foods – from sushi to salads; oysters to goat’s milk cheese, smoked salmon to seared scallops. This zippy, food-loving wine easily takes on tart dressings and sauces.
